Sweet Hawaiian BBQ Sockeye Salmon

Ingredients:

1 full wild sockeye salmon fillet or 3-4 portions


Sauce:
1 1/2 cups of Low Sodium Soy Sauce 
3 TB brown sugar
2 TB corn starch
1/4 cup yoshida teriyaki sauce
2TB fresh minced garlic
4 ice cubes

Toppings:
12 slices of fresh pineapple 
Sweet chili sauce
Sesame seeds

Directions

Start by picking a sustainably sourced wild Sockeye salmon. Thaw, rinse and pat dry. Cut into desired portions. In a sauce pan simmer low sodium soy sauce, brown sugar, corn starch, yoshida teriyaki sauce, and fresh garlic. Cool with ice and poor over sockeye portions. Sit salmon skin down in a pool of cool, sweet teriyaki for 1-3 hrs in the fridge.

Take out of the fridge and scatter fresh sliced pineapple atop of each. Drizzle sweet chili sauce overtop and sprinkle your sesame seeds. Let the Salmon be your canvas. 

  • BBQ @350 for 15-20 mins, skin down, (until the thickest pieces is flakey)
