Pan Fried Salmon Nuggets
A favorite amongst kids and adults alike! Get your Omega-3s in with a dish that screams melancholy for a vacation you're waiting to take.. sitting on a deck in a coastal fishing town on a sunny afternoon! A meal that can easily double as an appetizer and the perfect finger food of choice!

Ingredients
- 1 Salmon Fillet (skinned and deboned)
- 1 cup Italian style bread crumbs
- 1 cup Panko bread crumbs
- 1 cup flour
- 3/4 teaspoon garlic salt
- 1/8 teaspoon pepper
- 1 egg
- 1/3 cup olive oil
- 1 fresh lemon
Sauce
- cocktail sauce
- tartar sauce
Directions:
Cut skinned & deboned sockeye salmon into 1-1/2 inch by 1 inch bites. Rinse and pat dry cubed salmon and let rest on a bed of paper towels in the fridge.
Combine in a bowl, Italian style bread crumbs, Panko bread crumbs, flour, pepper, and garlic salt. In a separate bowl whisk an egg.
Heat olive oil in pan to approximately 300 degrees F (medium high heat)
Dip salmon cubes in the egg, then burry in flour mix, pushing flour on all sides. Then set aside.
Without touching the nuggets together in the pan, spread out salmon bites. Cook for 2 mins a side without disturbing, flip, and cook another 2 mins. Remove from pan and let rest on a bed of paper towels.
Serve with sliced lemon and sauces.
